Larry Cherubino is a first generation Australian. Like many from the great Italian migration, winemaking has always been something he’s known. This wine is made in a clay cement ovoid tank – a giant “egg” – the lees are continuously forced upward by an internal current resembling a vortex. This gives the wine voluptuousness, purity and texture. The shape was inspired by old Roman amphorae, so why Uovo? It’s Italian for egg! Linear and fine with lingering acidity. Stone fruit, lemon and ginger finishing with a chalky texture.
