The first organic gin of the Iberian Peninsula and the sixth in the world is being produced in Évora, southy of Portugal. A bet on organic production and craftsmanship to differentiate and win the market. The entire production process gin is made by hand, using barrels for fermentation of malted grain and copper stills for distilling the gin. For the production of the cereal fermentation is carried out in barres, followed by three distillations, and the latter includes placing the “gin essences” in the still. The base of the gin is the juniper, but the recipe includes peppermint and pippermint, among others.
